Tomato Soup

There is nothing better than sitting on the couch on a cold rainy day with a bowl of warm broccoli soup in your hands to warm you up. Broccoli soup is one of my favourite soups, it is tasty, easy to make, and you can easily add vegetables

  1. Cut the onions into cubes and mince the garlic.
  2. Melt butter or oil in a pot over a medium heat and cook the onions for 2-3 minutes.
  3. Add canned tomatoes, chili, the vegetable stock, rosemary and salt and pepper. Cook it for 20 minutes over a low fire.
  4. For a more subtle taste of the rosemary, remove it before puréeing the soup. Purée the soup with a hand mixer or in a blender. When using a blender, leave a portion of the lid open to allow steam to escape.



For an extra smooth soup, strain it through a fine-meshed sieve.

For an extra rich soup, add 1/4 Cup heavy cream.
