Ghanaian Chicken Soup

Ghanaian light soup is a hot and  spicy tomato based soup. There are different variations of the soup, it can be made with fish beef chicken or mushrooms. Traditionally, it is usually eaten with fufu, but it’s also delicious on its own. Besides, this soup is very soothing when you have a cold.

Ghanian Chicken Soup

  1. Wash and cut the chicken and chop one onion into cubes.
  2. Put the chicken in a medium-sized pot, add the chopped onion, scotch bonnet, the bouillon cube, salt and about 1 cup of water. Add the bay leaves and the tomato paste. Put the lid on the pot and allow the chicken to steam for about 8-10 minutes.
  3. Remove the pepper from the pot, blend the pepper together with the boiled tomatoes.
  4. Strain the blended tomatoes and add it to the chicken.
  5. Blend the onion, garlic and ginger along with about 1 cup of water.
  6. Strain the blended vegetables and add it to the soup.
  7. Add the remainder of the water to the soup and cook it for about 15-25 minutes.
