Pumpkin Ginger Soup

Pumpkin is a great winter vegetable full of flavour and vitamins.  This pumpkin ginger soup is guaranteed to be a success! It is creamy, delicious and full of flavour.

Ingredients

Instructions

  1. Peel the pumpkin, ginger and onion and cut into chunks. Also chop the chili pepper.
  2. Heat water in a pan over medium heat, add pumpkin, ginger, onions, pepper and curry powder. Cook the vegetables for 10-15 minutes or until tender.   
  3. Purée the soup using either a hand blender or a blender. When using a blender,  uncover the lid to allow steam to escape.

Notes:

Complete the soup with thyme or rosemary, this soup also goes well with coconut cream!
