There is nothing better than sitting on the couch on a cold rainy day with a bowl of warm broccoli soup in your hands to warm you up. Broccoli soup is one of my favourite soups, it is tasty, easy to make, and you can easily add vegetables
In Amma's Kitchen
Wash and cut the broccoli, celery, onions, and garlic into small pieces.
Melt the butter over in a heavy pot over low-medium heat. Add the onions and garlic and cook it for 2 minutes.
Add the chopped celery, cook it along for another 3 minutes.
Add the broccoli, spinach and vegetable stock. Cover the pot with a lid and cook until the broccoli is done.
Purée the soup with a hand mixer or in a blender. When using a blender, leave a portion of the lid open to allow steam to escape.
Finish with salt, and pepper to taste.
