Black Bean Soup

We all have days when we just don’t have enough time to fix ourselves a well deserved good bowl of soup. Canned beans come in handy on those days. They are versatile, filling and a good source of protein. For this spicy soup, I used canned black beans, and it tuned out amazing! This soup can be made in just under 30 minutes.   1. Cut the tomatoes and onions in cubes, and mince the jalapeño and garlic.
  2. In a cooking pot, heat oil over a medium heat, add the minced jalapeño and garlic and cook for 2-3 minutes.
  3. Add the onions and cook it for another minute.
  4. Add the tomatoes, oregano, cumin powder and chili powder, leaked beans, and vegetable stock. Cook for 10-15 minutes over a low to medium heat.
