White Asparagus Soup

White Asparagus are grown underground and are not exposed to light, that it what causes them to be white. They are a bit milder compared to their green and purple counterparts. I made this white Asparagus soup with some leftover veggies that I had, and it was so good that I decided to share it with you

White Asparagus Soup

Ingredients

Instructions

  1. Sauté the onions in the butter over a medium heat for 3 minutes.
  2. Add the asparagus to the sautéed onions and cook it for another 2 - 3 minutes.
  3. Peel and cut the potatoes, add it to the asparagus and onions and add the stock.
  4. Add pepper and salt to taste and the bay leaf. Let it cook for 30 minutes, or until the potatoes are soft, over low-medium heat.
  5. Remove the bay leaf and add the heavy cream.
  6. Use a hand mixer, blender or kitchen machine to blend the vegetables.
  7. Serve the soup with chopped chives or parsley.
